Method

Shellfish Sauce

  • Clean the shrimp, keep the shells and set the shrimp aside in the refrigerator.
  • Dice carrots, celery stalks, celeriac, and fennel. Roughly chop the onion and garlic.
  • Sauté vegetables and shrimp shells in oil for about 4-5 minutes, without browning. Pour in the wine and bring to a boil.
  • Stir in tomato paste, add bay leaves, then pour in water and heavy cream. Let everything simmer gently for about 2 hours.
  • Strain the sauce, reduce to desired consistency, and season with salt, pepper, and cayenne pepper.
  • Keep the sauce gently warm. Puree it with an immersion blender just before serving.

Side Dishes

  • Blanch the tomatoes by scoring a cross on the top and immersing them in boiling water for a couple of minutes, then transfer them quickly to ice water. Peel off the skin, remove the seeds, and chop into small cubes.
  • Finely chop the chili and heat it in a little oil with the tomato. Add the shrimp and warm through. Stir in basil.
  • Peel and barely cook the asparagus in lightly salted water, about 3 minutes.

Oven-baked cod

  • Set the oven to 200 °C.
  • Cut the cod fillet into evenly sized pieces, place them in a baking dish, sprinkle with salt, and add a little water.
  • Cover with aluminum foil and bake the cod in the oven for about 15 minutes.
  • Serve the cod with shellfish sauce, shrimp, asparagus, and boiled potatoes.
