If you're using fresh halibut, it must be frozen for a day and then thawed before preparing, especially when served raw.
Cut the halibut into cubes.
Toast the pepper in a dry skillet until the peppercorns swell and become tender, about 3-5 minutes.
Crush them coarsely using a mortar and pestle or over a cutting board.
Finely chop shallots, garlic, and ginger; slice spring onions into rings; and squeeze the lime juice.
Sauté shallots and garlic in rapeseed oil until soft, then add ginger and pepper.
Remove the pan from heat, then stir in spring onions and lime juice.
Let cool to room temperature and fold in the halibut cubes.
Coarsely chop cilantro and squeeze lime juice.
Blend all the ingredients for the avocado cream until smooth using an immersion blender or in a regular blender.
Taste with salt.
Coarsely chop red onion, grate apple with a grater, and cut snow peas into strips.
Sauté red onion in olive oil over medium heat.
Transfer to a bowl along with spinach, and season with salt.
Mix in the apple and snow peas.
Layer the spinach mixture at the bottom of the bowls, then add the halibut cubes and avocado cream on top. Finish with crispy fried onions, sesame seeds, and peanuts.
