Ceviche with Salmon and Halibut

  • Cut the salmon and halibut into small cubes and place in a small bowl.
  • Squeeze the lime and lemon juices, and pour over the fish along with the orange juice.
  • Mix well, cover the bowl with plastic wrap, and let stand in the refrigerator for 45 minutes to 1 hour.
  • Strain the juice from the fish, and set it aside.
  • Cut the mango into small cubes and finely chop chili and coriander.
  • Combine the fish with mango, chili, and coriander, and drizzle with some of the citrus juice.
  • Season with salt and pepper to taste.
  • Serve in small bowls with tortilla chips on the side.
