Oven-baked pollock in miracle sauce

An Asian-inspired miracle sauce with soy, lime and honey gives the mild, oven-baked saithe a simple and flavorful lift. Method

  • Place the broccolini in the bottom of an ovenproof dish together with the saithe fillets. If you prefer, you can use broccoli cut into florets. Drizzle with olive oil and season with salt and pepper.
  • Place in a preheated oven at 180°C for 12–15 minutes.
  • Finely chop the garlic and squeeze the lime. Put the ingredients for the sauce into a pan. Bring to a boil, stirring, until it begins to thicken.
  • Turn off the heat and pour the sauce over the fish and broccoli. Top with thinly sliced chili, chopped coriander and sesame seeds. Serve with rice or potatoes.
