Mediterranean-flavored Pollock

Ingredients

Method

  • Preheat the oven to 200°C.
  • Roughly chop the tomatoes and garlic.
  • Slice the olives and red onion.
  • Combine everything in a bowl and toss with olive oil, Provençal herbs, and freshly ground pepper.
  • Line the bottom of an ovenproof dish with lemon slices.
  • Place the cod on top and season with salt, pepper, and grated lemon zest.
  • Spread the vegetable mixture over the fish and bake in the middle of the oven for about 15 minutes.
  • Garnish with parsley and serve with good bread.
