Looking for a little variety in your barbecue meals? Grilled trout with Greek salad and tzatziki is a fantastic combination that works just as well at home for dinner as it does on a trip. Method

Trout Skewers

Soak the wooden skewers in water for about 30 minutes. (Pack them in a container of water if you're going on a trip.)
Cut the fish into slices and thread onto the skewers. Brush with a little oil and sprinkle with salt and pepper. Grill on both sides. You can also use salmon instead of trout. Serve in a flatbread with Greek salad and tzatziki.

Greek Salad

Prepare and pack in a container if you're going on a trip
Chop tomatoes, cucumbers, bell peppers, and red onion and toss with olive oil and oregano.
Sprinkle with crumbled or diced feta cheese and whole olives.

Tzatziki

Prepare and pack in a container if you're going on a trip
Peel the cucumber, halve it lengthwise, and scoop out the seeds with a spoon.
Grate the cucumber coarsely with a grater and sprinkle with a little salt.
Let the cucumber sit in the fridge for 15 minutes.
Drain and squeeze out the excess moisture from the cucumber.
Finely chop the garlic and mix with the other ingredients.
Season with salt and pepper, sugar, and a little lime juice.
Tzatziki can be prepared well in advance and stored chilled in the refrigerator
