Spicy Cod Soup

Ingredients

Method

  • Finely chop onion, garlic, chili, and ginger. Sauté until translucent in oil.
  • Add curry paste and butter, and stir well.
  • Cut zucchini and spring onion into pieces and sauté with the rest for 2 minutes.
  • Add coconut milk, cream, lime juice, and sugar. Bring to a boil and let the soup simmer gently.
  • Add cod chunks, bring to a boil, and let the cod poach in the soup for about 5 minutes.
  • Serve in bowls and top with mango, chopped spring onion, and chopped cilantro.
