Poor Man's Lobster with Coalfish (Pollock)

  • Preheat the oven to 190°C.
  • Rub the haddock fillets with the spices and lemon zest. Place in an ovenproof dish and pour over the melted butter. Bake for 12-15 minutes.
  • Squeeze lemon juice over the haddock and serve with pea purée and roasted potatoes.
  • Other serving suggestions include steamed vegetables and barley.
