  • Time Required: 30-40 min
  • Difficulty: Easy

Ingredients

Oven-Roasted Vegetables

Tzatziki

Method

  • Preheat the oven to 180°C with fan assistance.
  • Cut the salmon into large cubes and toss them in a mixture of cumin, chili powder, salt, and sesame seeds.
  • Thread the salmon cubes onto skewers and quickly fry them in olive oil in a frying pan.

Oven-Roasted Vegetables

  • Peel the vegetables and cut them into thin sticks.
  • Rinse the vegetable sticks in water and dry them thoroughly—they must be completely dry before frying.
  • Place the vegetables in a thin plastic bag with olive oil, salt, and thyme. Mix well.
  • Spread the vegetables on a baking sheet lined with parchment paper, and roast in the middle of the oven for 10–15 minutes.

Tzatziki

  • Peel the cucumber, cut it lengthwise, scoop out the seeds with a spoon, and grate it coarsely.
  • Sprinkle a little salt over them and let the cucumber rest for 15 minutes before draining the excess liquid.
  • Finely chop garlic and mix it with the other ingredients for the tzatziki.
  • Season with salt and pepper, sugar, and a little lime juice.
  • Serve the salmon skewers with oven-roasted vegetables and tzatziki.

Tips: Cut the skewers shorter to fit your frying pan.
