Method

  • Cure the salmon in a bag with sugar and salt overnight.
  • Remove the salmon from the bag and pat the fillet dry with a paper towel.
  • Mix cumin, paprika, fennel, and chili powder, and rub the mixture thoroughly into the salmon.
  • Quickly sear the salmon for about 30 seconds on each side. The salmon should not be fully cooked.
  • Cut the avocado into pieces approximately 2×2 cm.
  • Slice the cured salmon and serve topped with avocado and a dipping sauce.

Dipping Sauce

  • Cut the mango into small cubes and mix with lime juice and olive oil.
