Spiced Salmon with Oven-Roasted Root Vegetables

Method

Oven-Roasted Vegetables

  • Wash the potatoes and cut into large wedges.
  • Cut shallots into thirds, and chop carrots, rutabaga, parsnips, and celeriac into sticks.
  • Mix potatoes, shallots, carrots, rutabaga, parsnips, celeriac, and green beans together, and place in a greased ovenproof dish.
  • Finely chop chili and ginger, then mix with olive oil, vegetable broth, lemon juice, and sugar, pouring over the vegetables.
  • Toss the vegetables in the mixture and bake in the oven until tender.

Spiced Salmon

  • Preheat the oven to 180 °C.
  • Slice the salmon into serving pieces.
  • Mix ground fennel, ground clove, paprika, chili powder, and salt.
  • Cook the fish in butter and oil until browned, about 2 minutes on each side.
  • Serve the spiced salmon with the oven-roasted root vegetables.
