Salmon Casserole with Basil Topping

Fish pie is a favorite for both kids and adults. In this recipe, a topping made of basil, bread slices, and garlic is used instead of the traditional breadcrumb mixture. All our recipes are sourced from godfisk.no

Method

  • Preheat the oven to 180 °C.
  • Cook the macaroni according to the package instructions.
  • Cut the salmon into cubes and fry in a skillet with a little butter until golden. Season with a pinch of salt and set aside.

White Sauce

  • Melt butter, stir in flour and gradually add milk while whisking to create a smooth sauce.
  • Finely chop shallots and add to the sauce.
  • Bring to a boil and season with salt, cayenne pepper, and nutmeg.
  • Allow to cool slightly, then beat egg whites until stiff.
  • Fold the egg yolks into the sauce and gently incorporate the beaten egg whites.
  • Grease an ovenproof dish and layer in the salmon, cooked pasta, and sauce.

Topping

  • Remove the crusts from the bread slices and process the bread in a food processor with garlic and basil until evenly distributed and crumbly.
  • Sprinkle the breadcrumb topping over the casserole and bake in the oven until golden on top, approximately 20 minutes.

  • Grate carrots, rutabaga, and apple using a grater or food processor.
  • Mix water, vinegar, sugar, and lemon juice in a bowl, then fold in the grated carrots, rutabaga, and apple. Stir well to evenly distribute the dressing.
  • Cover with plastic wrap and chill until ready to serve.
  • Serve the salmon casserole with the raw vegetable salad and mashed potatoes.

Tip:In this recipe, you can substitute other fish varieties such as cod, haddock, halibut, or pollock.
