Baked Norwegian Coastal Cod with Garlic, Sun-Dried Tomatoes, and Pine Nuts

Oven-Roasted Vegetables

Method

  • Slice the potatoes into rings and cook until tender in unsalted water.
  • Drain the water and mash with a potato masher or fork.
  • Stir in butter and gradually add heavy cream until you achieve a smooth mash.
  • Season with salt and pepper to taste.

Oven-Roasted Vegetables

  • You can use any vegetables you like. Red onion, broccoli, and carrots are very good choices for this recipe.
  • Wash and cut the vegetables into equally sized pieces. Place them in an ovenproof dish. Drizzle with olive oil, add salt and pepper. Toss to coat and roast in the oven at 180°C (356°F) until tender (15-20 minutes).

Baked Norwegian Coastal Cod

  • Preheat the oven to 180 °C.
  • Sprinkle the cod fillet with salt and let it sit for about 10 minutes.
  • Rinse off the salt from the fish and pat dry with paper towels.
  • Cut the haddock into serving pieces.
  • Finely chop garlic and basil.
  • Briefly sear the fish fillets in olive oil on both sides, then place them in a greased ovenproof dish.
  • Saute garlic and sun-dried tomatoes in olive oil until fragrant with the fish.
  • Add basil and pour it over the fish.
  • Sprinkle pine nuts on top and bake in the oven until the fish is fully cooked, about 8-10 minutes.
  • Serve the Norwegian Coastal Cod with mashed potatoes.

Tip:The fish tastes best and is juiciest if it still has a slight raw core in the middle.
