Prawns with Coconut

  • Wash, peel, and finely chop the onion and garlic.
  • Wash, peel, and cut the spring onions and chili into thin rings.
  • Sauté the onion in liquid margarine until translucent.
  • Add curry paste and mix well.
  • Add garlic, spring onions, chili, and coconut milk, and let it simmer for 2–3 minutes.
  • Season with salt, lime juice, and pepper.
  • Add the prawns just before serving and sprinkle with fresh coriander.
  • Serve the dish along with egg noodles.
