Method

  • Cut the cod into serving pieces and sprinkle with salt.
  • Cut leek and bell pepper into pieces, and sauté in rapeseed oil until the leek is soft.
  • Add cream, crumble a fish stock cube over, stir gently, and bring to a boil.
  • Stir in coconut milk and curry paste, and bring to a boil.
  • Place the cod pieces in the pan, cover with a lid, and let simmer until the fish is cooked through, about 5 minutes.
  • Serve with rice and naan on the side.

Tip:You can also use pollock fillet instead of cod in this recipe.
