Pink Herring Salad

Herring salad is a traditional classic often served with rye bread. There are many different variations, but in this recipe, apple, beets, and potatoes are added. All our recipes are sourced from godfisk.no

  • Taste the herring fillets and soak them in water or milk for a couple of hours if they are too salty.
  • Peel and cook the potatoes.
  • Dry the herring fillets and cut them into cubes.
  • Cut the potatoes, apple, and beets into cubes, and finely chop the pickled cucumber and onion.
  • Mix together light mayonnaise and low-fat sour cream, and season with vinegar and a little sugar to taste.
  • Gently fold in the remaining ingredients.
  • The herring salad is ready to serve and will keep in the refrigerator for about 1 week.
