Coastal Hake with Onions and Remoulade

Sear-fried fish fillet with onions and remoulade

Pan-fried hake fillet or hake steak served with onions is a classic dinner. The remoulade adds extra flavor to the dish. Method

Cut the hake into serving portions. If using frozen hake steaks, you can divide them into pieces of your desired size.
Mix cold water and salt until dissolved, and let the fish pieces sit in the brine for about 10 minutes.
Remove the fish and pat them dry with paper towels.
Dredge the pieces in flour, shake off excess, and fry in butter for about 2 minutes on each side until golden.

Side Dishes

Slice onions thinly. Sauté the onions in butter with a pinch of sugar until caramelized.
Add lemon juice and lemon zest, and simmer until the onions are tender.
Season with salt and pepper to taste.

Remoulade

If you'd like to make your own remoulade, follow the steps below. Otherwise, you can easily buy a ready-made version from the store.
Finely chop capers and pickled cucumber.
Mix the ingredients for the remoulade and season with salt, pepper, and a few drops of lemon juice.
Serve the hake with onions, remoulade, and boiled potatoes.
