Pan-Fried Cod with Vegetable Salsa

  • Cut the cod fillet into evenly sized pieces, then cut each into two thin fillets.
  • Place cheese and ham between the two thin fillets and press the fish firmly together.
  • Mix all-purpose flour, salt, and pepper, then coat the fillet in the mixture.
  • Cook the fish in a blend of butter and oil until golden, about 3 minutes on each side.

Vegetable Salsa

  • Dice the onion and zucchini into small cubes.
  • Blanch the tomato by scoring a cross on top, dipping into boiling water for a couple of minutes, then transferring to ice-cold water. Peel off the skin, remove the seeds, and dice the tomato flesh.
  • Sauté onion, zucchini, and tomato in oil until thoroughly heated.
  • Stir in lemon juice and season with salt and pepper.
  • Finish by stirring in chopped parsley.
  • Serve the pan-fried cod with vegetable salsa and boiled potatoes on the side.
