  • Time required: 60 min
  • Difficulty: Medium

Ingredients

Method

  • Mix sugar, salt, and rice vinegar in a small saucepan, and gently bring to a boil while stirring. When the sugar and salt have dissolved, the rice marinade is ready.

  • Let the marinade cool before use.

  • Wash the rice thoroughly in cold water 3-4 times, and drain well during the final rinse.

  • Add the rice and water to a saucepan, cover with a lid, and bring to a gentle boil. Reduce the heat to low and cook for 15 minutes. Remove the saucepan from the heat and let the rice rest covered for 10 minutes.

  • Transfer the rice to a container, add a little of the marinade, and gently fold it in. The rice must not become too moist, so add the marinade gradually as needed.

  • Allow the rice to cool at room temperature, then cover with a damp kitchen towel to prevent it from drying out.

Tip:Ready-made sushi seasoning or sushi-su can also be purchased and used as marinade for the rice.
