The prepared rice is the secret to great sushi and is seasoned with a light, tangy marinade of sugar, salt, and rice vinegar. This recipe makes enough rice for about 15 sushi pieces per serving. All our recipes are sourced from godfisk.no

Mix sugar, salt, and rice vinegar in a small saucepan, and gently bring to a boil while stirring. When the sugar and salt have dissolved, the rice marinade is ready.
Let the marinade cool before use.
Wash the rice thoroughly in cold water 3-4 times, and drain well during the final rinse.
Add the rice and water to a saucepan, cover with a lid, and bring to a gentle boil. Reduce the heat to low and cook for 15 minutes. Remove the saucepan from the heat and let the rice rest covered for 10 minutes.
Transfer the rice to a container, add a little of the marinade, and gently fold it in. The rice must not become too moist, so add the marinade gradually as needed.
Allow the rice to cool at room temperature, then cover with a damp kitchen towel to prevent it from drying out.
Tip:Ready-made sushi seasoning or sushi-su can also be purchased and used as marinade for the rice.
