Pan-fried herring with salad

Fried herring in a salad is light and very delicious. It pairs perfectly with a Panzanella salad made of onions, tomatoes, basil, and olive oil. Simple and flavorful! All our recipes are sourced from godfisk.no

Method

  • Cut each herring fillet into three pieces and season with salt and pepper.
  • Cook them in a hot skillet with oil, skin side down, for about 1-2 minutes. Add garlic and basil, then cook on the other side until the herring is done.

Salad

  • Blanch the tomatoes by scoring a cross on top and dipping them into boiling water for a couple of minutes, then transfer quickly to ice-cold water. Peel off the skin and cut the tomatoes in half.
  • Remove the crust from the bread and cut it into cubes.
  • Slice red onion into rings and finely chop the garlic.
  • Combine all salad ingredients and season with salt, pepper, and vinegar to taste.
  • Serve the Panzanella salad topped with herring and fresh basil leaves.
