Torsk Sayadieh

Method

  • Sprinkle salt over the cod.
  • Sear the cod in a frying pan with rapeseed oil, skin side down, until golden. Flip and cook until nearly done.
  • Remove the skin from the cod and flake it into smaller pieces.

Side Dishes

  • Toast almond flakes and pine nuts in rapeseed oil in a skillet until they turn a golden-brown color.
  • Place the nuts on paper towels to drain excess oil, then sprinkle with a little salt.
  • Slice the onion into strips and sauté in a large pot until golden. Remove half of the onions and set aside; this will be used as a garnish.
  • Add spices, cinnamon stick, fish broth, and rice.
  • Let it simmer covered on low heat for 25 minutes. The rice should be cooked through and the liquid absorbed.
  • Season with salt to taste
  • Serve the cod and rice topped with fried onions, pine nuts, and almond flakes. Feel free to garnish with fresh herbs and lime wedges if available.

Tip:Fish stock can be replaced with fish broth.
