Herbal Herring on Rye Bread

Herring in jars can be served for breakfast, at the cold table, or as tapas. For tapas, simply cut the rye bread into smaller pieces and add a bit of herring. All our recipes are sourced from godfisk.no

  • Taste the herring fillets and soak them in water if they are too salty.
  • Cut the herring fillets into pieces, and thinly slice red onion, onion, leek, and lemon.
  • Chop parsley and dill.

  • Crush allspice and peppercorns in a mortar, and add to a saucepan with the other ingredients.
  • Bring the brine to a boil, then cool completely.
  • Layer herring, onion, leek, lemon, parsley, and dill in a jar or container.
  • Pour the brine over and cover with a lid.
  • The herring should marinate for a day in the refrigerator before serving.
  • Serve the herbal herring on small slices of rye bread.
