Orange Herring

Method

  • Taste the herring fillets and soak them in milk or water for a couple of hours if they are too salty.
  • Bring water and sugar to a boil, then cool and add vinegar. Place the herring fillets in the vinegar brine and leave overnight in the refrigerator.
  • Pat the herring fillets dry and cut into pieces.
  • Peel the orange and cut it into pieces. Coarsely chop the almonds and toast them in a dry pan.

Sauce

  • Grate the orange peel and squeeze out the juice along with the lime.
  • Mix light mayonnaise and sour cream together with the orange and lime juice.
  • Adjust the flavor with orange zest and possibly more orange or lime juice.
  • Layer the herring, orange pieces, and almonds in a glass jar or container.
  • Pour over the sauce and put on the lid.
  • The herring should marinate for a few hours in the refrigerator before serving. The herring is shelf-stable in the fridge for about 1 week.
