  • Scrape the mackerel flesh from the skin with a fork.
  • Slice the red onion into rings.
  • Place mackerel, red onion, mayonnaise, and spinach on one slice of bread.
  • Squeeze a little lemon juice over it and put the other slice of bread on top.
