Emilie's Pan-Fried Cod with Bacon and Green Goddess Salad

Method

  • Roughly chop the ingredients for the green goddess dressing and transfer to a food processor or use an immersion blender in a tall, narrow container.
  • Blend until you achieve a smooth sauce.
  • Finely chop cabbage, cucumber, and broccoli before mixing everything together in a large bowl.
  • Pour the dressing over and mix well.
  • The salad can sit and develop flavor while you prepare the rest.
  • Cut the bacon into smaller cubes and fry in a skillet until crispy. Set aside.
  • Heat a frying pan over medium-high heat. Add oil and butter, and cook the cod with the skin side down. Sprinkle with lemon pepper. Use a spoon to baste the hot butter over the fish fillets repeatedly. When they start to flake, they are ready.
  • Total cooking time is 10–12 minutes, depending on the thickness of the fish.
  • Transfer the cod to a plate and serve with green goddess salad and bacon crumbles.
