  • Cut the cod fillet into serving pieces.
  • Toast coriander seeds and caraway in a dry wok or pan.
  • Cut shallots, garlic, ginger, lemongrass, and chili into smaller pieces, then blend in a food processor with coriander seeds, caraway, nutmeg, pepper, shrimp paste, and oil until smooth.
  • Heat the wok and fry the cod in a little oil until golden brown, about 1 minute per side.
  • Add the curry paste and mix gently.
  • Pour in coconut milk and bean sprouts, and let everything simmer for 5-6 minutes while stirring.
  • Season with salt and pepper to taste.
  • Serve with jasmine rice on the side.
