Pollock Fishcakes with Vegetable Strips

Method

  • Cut the wolffish into smaller pieces and pulse it with salt in a food processor until you reach the desired consistency. Add potato starch and rice vinegar, and process until everything is well combined.
  • Cut the spring onions into small pieces and mix them into the fish mixture together with finely grated ginger. Taste and add salt if needed. Shape into small fish cakes and fry them in oil until cooked through and golden on both sides.

Vegetable Strips

  • Wash the carrot and cucumber thoroughly. Use a cheese slicer to slice the carrot and cucumber lengthwise, then cut the slices into strips.
  • Make a dressing from lime juice, sugar and soy sauce, and adjust the seasoning. Toss the dressing with the vegetable strips and let them sit for a few minutes.
  • Serve the fishcakes with vegetable strips, rice, and soy sauce.

Tip:For a spicier soy sauce, add some chili slices to the sauce.
