Fried Salted Cod with Dip

  • Cut the salted cod into pieces about 2-3 cm.
  • Separate the eggs. Mix all the ingredients for the batter, except the egg whites, and let the batter rest in the refrigerator for about 30 minutes.
  • Heat up the frying oil in a pot or deep fryer.
  • Whisk the egg whites until stiff and fold into the batter.
  • Dredge the fish pieces in flour, then in the batter mixture, and fry the pieces until golden, about 4 minutes.
  • Place the fried pieces on paper towels to drain.
  • Serve the crispy fried salted cod with tomato salsa, aioli, and lemon wedges on the side.
