Grilled Salted Cod with Olive Salsa

Method

  • Finely chop garlic and sage, and mix them with lemon juice and olive oil to create the marinade.
  • Preheat the grill.
  • Place the salted cod on the grill with the skin side down and grill for 3-4 minutes over high heat.
  • Baste the side facing up with the marinade and move the fish to indirect heat for 4-5 minutes, until juices start to seep from the side and the fillet begins to flake apart.

Salsa

  • Coarsely chop olives and tomatoes.
  • Combine all ingredients for the olive salsa and season with salt to taste.
  • Let the salsa sit for a short while before serving.

Serving

  • Serve the grilled salted cod with olive salsa and cooked tagliatelle.

Tip:Feel free to replace half of the green olives with Kalamata olives.
