Grilled Lightly Salted Cod with Vegetables

Method

Let the cod soak in cold water for 3-4 hours, then dry it thoroughly with paper towels.
Finely chop lemongrass and flat-leaf parsley, then mix with olive oil and lime juice.
Pour the marinade into a small dish and place the cod in it, flesh side down. Let it marinate for at least 30 minutes.
Place the cod with the skin side down on the grill, cover, and grill until the fish flakes easily, about 15 minutes.

Vegetables

Slice eggplant and zucchini into rounds.
Cut the hearts of palm lettuce into four lengthwise and chop the bell peppers into pieces. Combine the vegetables in a
bowl with olive oil, salt, and pepper.
Toss the vegetables to coat well.
Grill the vegetables on both sides on a hot grill.

Serving

Serve the grilled cod with a drizzle of marinade and grilled vegetables on the side.
