Grilled Trout with Avocado Salsa and Warm Lentils

Method

  • Sprinkle salt over the trout and let it sit for 10-15 minutes.
  • Rinse off the salt, pat dry with paper towels, and cut into serving pieces.
  • Brush the trout pieces with olive oil and sprinkle with pepper.
  • Grill for 3-4 minutes on each side.

Avocado Salsa

  • Dice avocado and tomato into small cubes, and finely chop red onion, garlic, and chili.
  • Grate the lime zest and squeeze out the juice.
  • Mix everything together, add olive oil, and season with salt and pepper.
  • Let it sit in the refrigerator until ready to serve.

Side Dishes

  • Cook the lentils according to the package instructions.
  • Drain the cooking water and stir in olive oil.
  • Finely chop parsley and basil, squeeze lemon juice, and fold into the lentils.
  • Season with salt and pepper, and let it sit covered until serving.
  • Serve freshly grilled trout with avocado salsa and warm lentils.

Tip:The trout can also be cooked in a grill pan.
