Pot oven with cod and vegetables

  • Cut the fish into portion-sized pieces.
  • Clean and cut the bell peppers into strips, carrots into slices, celery into sticks, and broccoli into florets.
  • Sauté all the vegetables in oil for 1-2 minutes.
  • Add water and fish stock, and bring to a boil.
  • Stir in cornstarch slurry, lemon juice, thyme, and cayenne pepper, then bring to a boil.
  • Add the fish and bay leaves, cover with a lid, and let the dish simmer on low heat until the fish is cooked through, about 5 minutes.
  • Serve the cod stew with barley rice on the side.
