  • Rinse and clean the cod.
  • Place them in cold water, preferably running, for about 1 hour.
  • Boil potatoes.
  • Wrap the roe in parchment paper to prevent it from breaking apart during cooking.
  • Bring water with salt to a boil, add the roe, bring back to a boil, then reduce the heat. Let the roe simmer until fully cooked, approximately 30–45 minutes depending on thickness.
  • Remove the membrane from the liver and cut it into smaller pieces.
  • Bring water with salt, vinegar, pepper, and bay leaves to a boil. Add the liver, bring back to a boil, and let it simmer for 10–15 minutes.
  • Bring enough water to cover the fish fillets. Add 3 tablespoons of salt per liter of water and bring to a boil.
  • Add the fish fillets, bring to a quick boil, then reduce the heat and let the fish simmer until fully cooked, about 8 minutes.
  • Serve the freshly cooked fish with sliced roe, the liver in the cooking broth, and hearty potatoes—cooked carrots can also be added. Flatbread complements the meal well.
