Salted Cod Pizza with Garlic Dressing

Method

  • Preheat the oven to 220°C.
  • Cut the rehydrated salted cod into pieces.
  • Coarsely chop sun-dried tomatoes, onions, and olives.

Pizza dough

  • Dissolve yeast in lukewarm water, add olive oil, salt, and most of the flour.
  • Knead into a firm, smooth dough, and let rise for about 30 minutes.
  • Roll out the dough onto a baking paper brushed with olive oil.

Pizza sauce

  • Coarsely chop the tomato, and finely chop garlic, thyme, and oregano.
  • Add olive oil to a saucepan and heat the tomatoes over medium heat.
  • Add garlic, thyme, oregano, and tomato paste.
  • Season with salt and pepper to taste.
  • Spread pizza sauce over the pizza base and sprinkle with grated cheese.
  • Distribute salted cod, sun-dried tomatoes, onions, and olives over the cheese, and drizzle a little olive oil on top.
  • Bake the pizza in the oven until the crust is crispy and the cheese is golden, about 10 minutes.

Garlic Dressing

  • Finely chop garlic and mix with sour cream and mayonnaise.
  • Season with lemon juice, salt, and pepper.
  • Serve the pizza with garlic dressing and arugula salad sprinkled on top.
