Salmon Sashimi with Ginger Ponzu

Ponzu Sauce

Method

  • Ensure the salmon is of high quality. Preferably use loins. Make sure the salmon is fresh or has been frozen for at least 24 hours.
  • Slice the red onion into thin rings. Bring water, sugar, and vinegar to a boil, then add the onion. Let it cool in the brine.
  • Mix together the ingredients for the ponzu sauce.
  • Slice the salmon thinly, and cut the avocado into appropriate pieces.
  • Arrange this on a plate with the pickled onion, and sprinkle with toasted sesame seeds and microgreens. Serve with ginger ponzu.
