Lutefisk with white sauce

Method

  • Set the oven to 200 °C.
  • Cut the lutefisk into serving pieces and place them in a baking dish with the skin side down.
  • Sprinkle with salt and cover the dish with aluminum foil.
  • Bake the lutefisk pieces in the oven for about 30 minutes.
  • Cook the bacon in a dry skillet.

White Sauce

  • Melt butter and stir in the wheat flour.
  • Gradually add milk, and season with salt, whole black pepper, allspice, and cloves.
  • Let the sauce simmer for about 5 minutes.
  • Strain the sauce, then add butter and fish stock until the sauce reaches a nice consistency.

Peas

  • Sauté finely chopped shallots in butter and add peas.
  • Sauté the peas for about 2 minutes so they become thoroughly heated.
  • Puree the peas and shallots with an immersion blender. Reheat the pea mash. Add a bit more butter if it seems a little dry.
  • Serve the lutefisk with fried bacon, white sauce, peas, boiled potatoes, and mustard.

Tip:If you want a firmer lutefisk, sprinkle salt over it and let it rest in a cool place for a couple of hours. Drain the water that is released and then rinse the lutefisk in cold water.
