  • Cut the fish fillet into portion-sized pieces.
  • Sprinkle with salt and let the fish pieces rest for about 20 minutes.
  • Finely chop chili, garlic, and lemongrass, and grate the ginger.
  • Heat olive oil in a frying pan and sauté chili, garlic, lemongrass, and ginger over medium heat.
  • Add the fish pieces, cover, and let the fish simmer for 3 minutes.
  • Turn the fish pieces over and cook for another 2-3 minutes.

Mango Salsa

  • Dice mango and cucumber into small cubes, cut cherry tomatoes into wedges, and finely chop cilantro.
  • Mix everything together with olive oil and lemon juice.
  • Serve the fish fillet with mango salsa and cooked rice.
