Grandmother's Herring Salad

Herring is a must on any festive table, and especially around Christmas time, this dish is perfect. This flavorful herring salad recipe comes from 'Hungry Boys' and grandmother Synnøve's cookbook from 1955. All our recipes are sourced from godfisk.no

5 filet pickled herring
2 boiled eggs
5 small potatoes with skin
0.5 yellow onion
4 tbsp sour cream
1 tsp Dijon mustard
0.5 lemon
salt and pepper
1 pinch dill

Method

Chop the eggs, pickled herring, boiled new potatoes, and finely chop the onion.
Mix together crème fraîche, mustard, lemon zest, and eggs in a bowl.
Gently fold in the herring, potatoes, and dill.
Taste with salt and pepper. Feel free to let the salad sit in the refrigerator for a few hours or overnight.
Serve with rye bread.
