Omelette with Smoked Salmon and Cream Cheese

Method

  • Beat eggs and milk until smooth. Season with pepper and salt.
  • Add olive oil to the frying pan and pour in the mixture.
  • Lower the heat and cook until done (possibly under a lid). Set aside when ready.
  • Spread a generous layer of cream cheese. Add smoked salmon and avocado. Sprinkle with arugula, shallots, and chili. Season with pepper and salt.
  • Serve with good bread on the side.
