Baked Cod with Pesto

The cod fillet tastes especially good when spread with pesto and baked in the oven together with garlic, bell peppers, and broccoli. A fresh and colorful dish that will appeal to the whole family. All our recipes are sourced from godfisk.no

Method

  • Set the oven to 200 °C.
  • Cut the cod fillet into serving portions and sprinkle with a little salt and pepper.
  • Wash, clean, and slice the onions and garlic thinly.
  • Wash and prepare the broccoli and bell peppers.
  • Cut the broccoli into small florets and the bell peppers into pieces.
  • Dissolve the bouillon cube in the water.
  • Place the vegetables in a greased ovenproof dish.
  • Drizzle olive oil over the vegetables and pour in the broth. Sprinkle with a little salt and pepper.
  • Place the cod pieces over the vegetables.
  • Squeeze lemon juice over the cod and spread pesto on top.
  • Cover the dish with aluminum foil.
  • Bake in the middle of the oven for about 20 minutes or until the fish is cooked through.
  • Serve baked cod with rice on the side.
