Oven-baked cod with ham

Method

  • Set the oven to 200 °C.
  • Cut the cod into serving pieces and season with salt and pepper.
  • Place a teaspoon of butter on each piece of cod.
  • Wrap each piece of cod with a slice of ham and place them in a greased ovenproof dish.
  • Add the tomatoes to the dish and bake for about 10 minutes.

Root vegetables mash

  • Clean, peel, and cut all the root vegetables into even pieces. You can use a mix of root vegetables such as rutabaga, carrots, celeriac, parsnips, and Jerusalem artichokes.
  • Cook the vegetables until tender in boiling water with a generous pinch of salt.
  • Drain the cooking water and mash the root vegetables with cream and butter. Season with salt and pepper to taste.

Steamed asparagus

  • Break off the woody ends at the bottom of the asparagus stalks.
  • Bring water to a boil (use 1.5 tablespoons of salt per liter of water).
  • Place the asparagus in the boiling water and cook for 2-4 minutes. Cooking time depends on the thickness of the asparagus.
  • When cooked, cool the asparagus in ice-cold water.
