Pasta Salad with Shrimp and Pesto

Method

  • Cook the pasta according to the instructions on the package and cool in cold water.
  • Wash and chop the lettuce and spring onions, and halve the cherry tomatoes.
  • Mix the lettuce, spring onions, and cherry tomatoes, and place on a serving platter.
  • Put all the pesto ingredients in a blender and blend until well mixed. Season with salt and pepper.
  • Fold the pasta into the pesto, then add the shrimp and the salad mixture.
  • Serve the pasta salad with bread.
