Pepper-crusted Salted Cod with Root Vegetables

Salted cod is often served with a tomato-based sauce, but that doesn't mean it doesn't pair well with other flavors. Get inspired by this recipe where pepper elevates the taste of the fish. All our recipes are sourced from godfisk.no

Method

  • Preheat the oven to 180 °C.
  • Cut the onion into wedges, roughly chop the garlic, and cut the carrots, parsnips, celeriac, and celery root into sticks.
  • Mix the vegetables with salt, pepper, oil, and thyme, and place in an ovenproof dish. Put the dish in the oven and roast for about 40 minutes.
  • Slice the salted cod into portions. Crush the whole peppercorns in a mortar, sprinkle over the fish, and press them well into the fish.
  • Sear the salted cod in oil, pepper side down, for 2 minutes. Place it on an ovenproof dish with the pepper side up and finish cooking in the oven alongside the vegetables, for about 20 minutes.
  • Serve the salted cod with the vegetables and boiled potatoes.
