Cut the salt cod into serving portions.
Grate orange zest and mix it with flour, polenta, and finely chopped thyme leaves. Beat eggs together in a bowl.
First coat the fish fillets in egg, then in the polenta mixture.
Heat butter and oil in a frying pan and cook the fish until golden and cooked through, about 5 minutes on each side.
After frying the fish fillets, add a bit more butter and oil to the pan and sauté whole cherry tomatoes for a few minutes until warmed through.
Rinse the spinach and remove the coarse stems.
Place the moist spinach in a saucepan with a lid and steam until wilted. Stir in butter and finely chopped garlic, and season with salt and pepper.
Serve the freshly cooked breaded cod with sautéed cherry tomatoes, steamed spinach, lemon wedges, and boiled potatoes.
