Pulled Salmon with Asian Salad

Marinade

  • Finely chop garlic and chili.
  • Slice ginger and lime leaves into strips.
  • Combine everything in a bowl. Pour over sweet soy, regular soy, juice of 2 limes, sesame oil, and peanut butter.
  • Mix well.
  • Add lemongrass that you have pounded firmly so it breaks apart slightly – this releases flavor. Let it sit on the counter for 30 minutes so all the flavors meld.

Grilled Salmon

  • Place the salmon in an ovenproof dish and pour the marinade over. Grill until cooked through but still juicy (about 10 minutes). Use a fork to pull apart at the end.
  • While grilling, cook rice and place washed salad leaves on a plate along with sliced snow peas, spring onions, and radish slices.
  • Cut the lime into wedges and place a large bunch of cilantro in a glass of water to keep it fresh throughout the meal.
  • Serve pulled salmon in the salad leaves, topped with vegetables and serve rice with chili flakes and cilantro. Squeeze lime over and enjoy an explosion of Asian flavors.
