Mustard Herring with Apple Chunks

Mustard herring is a staple on the Christmas table, but you can make it both summer and winter. Here is a fresh variation with apple pieces. All our recipes are sourced from godfisk.no

Method

  • Remove the herring pieces from the brine, place on paper towels, and let them drain.
  • Cut the apple and onion into chunks, and finely chop the dill.
  • Mix together dill, mustard, sugar, vinegar, sunflower oil, and sour cream.
  • Season the sauce with salt and pepper, possibly a bit of sugar and vinegar.
  • Fold the apple and onion chunks into the sauce.
  • Layer the herring and sauce in a jar or glass container, then cover with a lid.

The herring should marinate in the refrigerator for a couple of hours before serving, and it keeps in the fridge for about 1 week.
