Lemon Grass Broth with Salmon and Shrimp

Method

• Cut salmon and cod into cubes and mix with grated ginger, salt, and sweet chili sauce.
• Cook rice noodles according to package instructions.
• Pound the lemongrass with the back of a large knife, slice the chili into rounds, and finely chop the coriander.
• Place lemongrass, chili, coriander, sugar, fish sauce, and chicken broth in a pot and bring to a boil.
• Strain the broth and season with lime juice.
• Add salmon and cod to the broth and bring to a boil.
• Cut carrots, cucumber, and spring onions into strips and add to the broth together with shrimp and rice noodles just before serving.
• Serve steaming hot.
