Spinach Waffles with Smoked Salmon and Horseradish Cream

Horseradish Cream

Method

  • Blend the spinach until smooth in a food processor.
  • Add the remaining ingredients and process until you have a thick batter.
  • Adjust with milk or flour if the batter is too runny/thick.
  • Let the batter rest for 10 minutes before baking the waffles in a greased waffle iron.
  • Grate the horseradish. You can also use prepared horseradish from a tube. Mix the ingredients for the horseradish cream together.
  • Cut or shape the waffles into simple hearts, and top with smoked salmon, a spoonful of horseradish cream, and dill. Feel free to sprinkle with a little grated horseradish at the end. If you have extra spinach leaves, you can use those as garnish as well.
