Pan-fried Arctic Char with Chili Honey

Method

  • Remove bones from the Arctic char fillets, rinse them in cold water, and pat dry with paper towels.
  • Brush the fillets with sesame oil, and sprinkle with salt and pepper.

  • Finely chop red onion and pineapple, and grate the ginger.
  • Combine the ingredients for the relish, and let it sit and marinate for 30 minutes before serving.

Marinade

  • Finely chop the chili, squeeze the juice from the orange, and mix with the rest of the marinade ingredients.
  • Heat the marinade and stir until the honey is melted. Set aside.
  • Cook the Arctic Char fillets in oil with the skin side down for about 2 minutes.
  • Brush the meat side of the fillets with the marinade, flip them, and cook for about 30 seconds on the other side.
  • Serve the Arctic Char with ginger relish and a side of jasmine rice and wild rice mixture.
