Pan-Fried Christmas Cod with Root Vegetables, Brussels Sprouts, and Bacon

Ingredients

Method

  • Peel and dice the root vegetables, then cook them until tender in lightly salted water.
  • Drain the water and mash the vegetables into a coarse purée. Stir in butter, gradually add the cream, and season with salt and pepper. Finish by adding a splash of clementine juice.
  • Cook bacon strips in butter over low heat until crispy.
  • Clean and halve the Brussels sprouts, then sauté them in butter until tender. Add sugar and continue cooking while tossing until the sugar has melted and caramelized the sprouts.
  • Cut the cod fillet into suitable portions and pan-fry in a little butter for about five minutes on each side.
  • Serve the dish with boiled new potatoes on the side.
